What’s on the dinner table this week?

I love to cook as much as I like eating delicious food and make the vast majority of the meal at home. What helps me keep up with our busy schedule is to plan ahead. Over the years, it not only has helped me manage our groceries, but it also allows me to manage my time better by knowing what I will be cooking ahead of time and eliminating the guesswork on weeknights. For some of the meals I cook, I like to prep the items that might be time-consuming in advance on Sundays.

What has been equally as helpful: finding the right appliances for my needs.
I have to admit, using an Instant Pot and/or Air fryer really helps cutting down my overall cooking time.

 It also makes cleaning easier for my husband who’s on cleaning duties :).




Monday

Jerk chicken / Rice and peas / Mixed veggies

For this to happen, I make sure to marinate the chicken the night before I cook it.
On Monday evening I use my air fryer to bake chicken and the Instant Pot to make the rice and beans.

Tuesday

Pasta and meat sauce / side salad.

I use whole grain pasta (usually linguine or rotini). For us, the meat ground turkey is the go-to. We tend to eat a limited amount of red meat.
For the sauce, I choose crushed tomatoes in a can as my base.

Parmesan cheese is a must-have topping ;).

Wednesday

Chicken rice bowls.

Fried rice, topped with fresh tomatoes and avocados

Using brown rice as the base (made in advance using the rice function on the Instant pot) I mix in frozen vegetables, soy sauce and season it.

Thursday

Fish Quinoa bowls with broccoli and avocado.

A light meal that is quick and easy to make. Fun dressing to serve with it is mustard/lemon/olive oil.

Friday

Take out!!!

Friday nights are usually reserved date nights. When we are staying in we order food from our local restaurant. Thai food is one of our favorites!

What about lunches?

Workweek lunches consist of salads, sandwiches, or leftovers from the previous night.

With a WFH schedule, something quick and easy is the best way for our home.

I mostly meal plan our dinners. When I have time, I throw some sandwiches into the Sunday meal prep, so we can grab them during the week to keep up with our WFH workflow.

2023 – what a ride! 🎉 Some of my favorite moments 2023 – what a ride! 🎉 Some of my favorite moments of the year:

- Kicked off the year recalibrating goals at an inspiring ATL retreat, gearing up for what God had in store.

- My sister-from-another-mother and childhood bestie came to NYC!!!!!! We created new memories that’ll last a lifetime!

- Pulled off an epic surprise for my Maman - showed up at her house in France for Mother’s Day. Her reaction was priceless. Grateful for my incredible family for keeping it a secret for months! So much preparation and prayers went into this trip, and God was so faithful. We received our new passports at the very last minute (few hours before our flight) and made it onto the plane just before takeoff. Celebrating my mom and soaking in the sweetness of Toulouse with my husband, family, and close friends was pure bliss.

- Hamilton on Broadway –> unforgettable memory! Can’t wait to go back!

- Celebrated our 9-year wedding anniversary where we had our very 1st date 12 years ago ❤️❤️❤️.

- I joined a new ministry team at church and what an amazing group of people to serve with! So thankful for them. 

- Wrapped up the year ministering with my BT Dance Family for Christmas at the Brooklyn Tabernacle.

Grateful for the memories, precious friendships, growth, ups and downs, and all the in-between that created a beautiful chapter. #BestOf2023 #Bye2023 #hello2024 #newchapterloading #grateful #thankyoujesus
